Day 19


Here I am folks, day 19 of my new way of eating, and I am seriously in love with it.  Today at work, someone literally walked up to me who didn't know I was a new found vegan, and said, wow you look really good, you look so happy, and colorful.  Have you been tanning?   I had no explaination, other than my new colorful diet.  I got all kinds of crazy looks when I told people at first that I was trying this.  People said "Oh you won't be able to do it", which in turn, and with my stubborn attitude, I am gonna do it to the max just because you said that I wouldn't.  I got, "Don't you miss bread", in which I answered, "No, not really."  Honestly, I don't miss much of what I used to eat.  I don't eat sugar now unless it's unrefined.  I eat cream of wheat in the mornings, with pure maple syrup...ya know...from a tree..expensive but it's worth it.  Most of the time, I don't feel like cooking, so I just eat my veggies and tofu raw!   I didn't just put my toes in the water, I dived in head first.  It wasn't a challenge after the first week. 

Obviously, I am not the first person to do this, and I'm not trying to act like "Whoa, look at this greatness, that is me, because I've conquered meat eating".  But, for me, a girl who just two years ago, went from being vegetarian to eating salami again because I love it, back to this is a huge leap for me.  But, lucky me...I found me some Soylami! I was ecstatic.

In honor of myself starting this lifestyle change, and right before summer, I decided to buy myself a nice new bathing suit from VS.  So, super excited for this--I can't wait to see what my body will be like this summer.  If you want to read more about body challenges and bathing suits...read this blog!   Rachael, you are really an inspiration. 

In all honesty, I'm really proud of myself.  This is the only way of eating, or a diet, if you even want to call it that, that I have found really simple, without feeling deprived, or ravenous.   I feel good, my mood is good, my attitude is light.  I am so glad I challenged myself to this.  Stay tuned for meal ideas, as I get a little more used to preparing my own meals, and amazing myself with my cooking skills.
